We are very privileged to participate in the Freestyle Hops Research Collective, gaining access to advanced selections of newly developed hops grown around Nelson in NZ. Amongst a range of possibilities we scored Paradisi. Serendipitously this is a variety that displays exciting white grapefruit with mixed tropical aromas, flavours we absolutely froth for.
We wanted to highlight the complexity of this super fruity NZ Hop. By late kettle, short whirlpool, dip and DDH techniques we sought to bring out the citrus and tropical aromas. Over an oat heavy base, we let the Paradisi do the talking. A super juicy and tropical aroma with soft lime citrus and stone fruit flavours and that characteristic NZ diesel dankness. It’s unsurprisingly complex and a hop we will definitely be adding to the repertoire.
