Jaboticaba is a little known gem of a fruit native to the states of Rio de Janeiro. Flavours of grape, plum, blueberries & lychee it has a sweet flesh with a sour skin. We added 30% pressed fruit & fermented on the skins to add some tartness & tannins. The resulting beer has a delicious jam like quality, with just enough earthy acidity to balance the sweetness
